Preserving your mavi yeast...Forever!

Zymurgy
zy-mur-gy:the branch of applied chemistry dealing with fermentation, as in winemaking, brewing, the preparation of yeast, etc.


For our simple purposes of making mavi at home, we are still going to deal with the science of zymurgy but in a very small scale. If you are interested in dealing with quality and pure yeast cultures, I included a very good article about this interesting science in APPENDIX B.

First, get a nice plastic bottle with a tight lid. Sanitize the bottle with bleach (Clorox in Spanish). Rinse thoroughly.

The yeast energizer that I buy is on sale in any wine shop. It is inexpensive and will help keep your yeast healthy. Once you mix this ingredients in this culture bottle, let it sit outside for a couple of days. Make sure you let the air out from the bottle twice a day or it will explode. Do not uncap the bottle, just twist off the cap until pressure is relieved. Once this is done and no more air come out, keep it in your refrigerator, This will make them go dormant and next time you need more yeast, that is your stock solution.

Then, make sure you keep your stock solution in the refrigerator so the yeast will grow slow and will not explode your container. Personally, I keep many different small bottles of yeast in my refrigerator. Just in case....
